It is an unpasteurized, vegetarian, cheese. The natural rind is firm and smooth with a gray-brown crust. Just before a start of maturing process, a layer of fresh herbs is added that gives Garland it's distinctive taste and flavor. Maturing process takes from six to eight weeks.
